Val's Oatmeal Carrot Cake

Valene Terry

1 1/2 C boiling water
1 C oatmeal
Mix and set aside to add later

1 C Sugar
1 C Brown sugar
1/2 C shortening or margerine
Mix together then add:

2 eggs
1 grated carrot
1 1/2 C flour
1 tsp. soda
1 tsp. salt
1 tsp. baking powder
1 tsp. cinnamon

Add oatmeal mixture and put in greased pan. Bake at 350 for 30 minutes.

Broiled Coconut topping:
3/4 cube butter
3/4 C brown sugar
1 Tbls. canned milk
Bring this mixture to a boil

1/2 C coconut
1/2 C chopped nuts
Spread on baked cake and place under broiler until top of cake is all bubbly. Watch carefully not to burn.
