Potato Bacon Casserole

4 cups frozen shredded hash brown potatoes
1/2 cup finely chopped onion
3 ounces bacon, cooked and crumbled
1 cup shredded cheddar cheese
1 12 oz can evaporated milk
1 large egg, lightly beaten
1 1/2 teaspoon seasoned salt

Preheat oven to 350 - grease 8" baking dish

Layer 1/2 potatoes, 1/2 onion, 1/2 bacon, and 1/2 cheese, repeat layers. Combine milk, egg and salt - pour evenly over potato layers, cover.

Bake for 55 to 60 minutes. Uncover for 5 minutes. Let stand for 10 to 15 minutes before serving.

Add chopped green/red pepper for variety. May use cooked sausage instead of bacon. You can also top with buttered cornflakes or french fried onions!
