Vegetable Pie

1 lb. fresh mushrooms sliced
1 onion, sliced
2 zucchini or yellow squash, sliced
1 green pepper, sliced
3-4 Tbsp. butter
1 tsp. salt
¼ tsp pepper
Dash garlic salt
1 tomato, sliced
1 (10-inch) pie shell, unbaked
1 C. Mayonnaise
1 C. grated mozzarella cheese

Saute vegetables in butter until crisp, but not soft. Drain well and add seasonings. Place tomato slices in bottom of pie shell, add vegetable. Pour mayonnaise cheese, mixture over vegetables. Bake uncovered at 350 for 1 hr. Serves: 6
